Last night's dinner: vegan patty melt and a falafel bowl @seedzcafe with @dashofdietetics. Had a great time catching up over yummy food. . . . So grateful that I was assigned such an amazing partner for the admin and health promotion rotations of this internship!Sweet potato muffins! I made these for the first time a few weeks ago, and even though I'm an "add chocolate to everything" person, I hesitated with these. In the end, I filled most of the muffin cups, then added chocolate chips to the last bit of batter so I could try a few that way. . . . Other than the right-out-of-the-oven molten chocolatiness, I actually preferred the non-chocolate chip version 😯 I made another batch this morning -- lots of sweet potatoes to use! These make a great snack -- recipe in comments.If you've been following me for awhile, you know I'm all about leftovers! The base of today's lunch is the same sesame noodles with stir-fried veggies that I had on Tuesday. . . . This meal made one dinner and two lunches for our family. Today I swapped in roasted sweet potatoes for the corn and added some fresh kale. . . . Kale and sweet potatoes #fromthegarden 🌱Today was an "eat dessert first" day. Both chocolate cake and apples can be satisfying dessert choices, depending on what you're in the mood for. Unless there's mold growing, or some kind of contaminant, neither of these is a "bad" choice. . . . While eating, pay attention -- how does it taste? At what point are you satisfied? . . . I took this photo last week -- today's dessert was not cake or an apple, but a chocolate peanut butter brownie. I put it in the warm car so the chocolate chips got nice and melty, and I savored each bite 😊Topics
